Workshop: Meat Processing for Optimal Sales

Join us at Adams Farm in Athol to watch a cutting demonstration of a cow and pig carcass, and to learn to choose the cuts that will be best for your market. Noreen Heath and Adams’ head butcher will describe different cuts that are in demand among restaurateurs and other wholesale and direct market customers. They will discuss differences they see in carcass quality of the animals brought to Adams, and will help you better navigate cut lists and learn about available cuts that aren’t listed.
