Valley Bounty, April 13: Cheese
Several local farms make delicious cheese from the milk of their own cows or goats. Fresh cheeses range from paneer, perfect for cooking, to creamy, spreadable chevre or salty feta. Aged yellow rounds of cheese are also available at local retailers, direct from farms, or at farmers’ markets, starting up soon for the summer! Use one in a favorite recipe, or try serving a platter of local cheeses.
