Sustainability Sessions at the Tastes of the World Chef Culinary Conference

UMass Dining is hosting the annual Tastes of the World Chef Culinary Conference in a couple weeks, and this year we’re adding sustainability pre-conference sessions on June 6-7. Email me for details, or register online at: http://www.chefculinaryconference.com/
Typically offered to chefs and other professionals in foodservice, we are now inviting the general public to experience a deeper side of the New England food system. (Some scholarship funding available – email me for details!) Join us for:
Sutter Meats Butcher Workshop & Tour of Czajkowski Farms
Saturday June 6 9:30am-3pm ($100)
- Learn the logistics of sourcing local meat and breaking down locally-raised pigs to maximize profit and sustainability (Sutter Meats – Northampton, MA)
- Tour 300-acre family farm and learn the benefits of strengthening ties to local farmers (Czajkowski Farms – Hadley, MA)
- Lunch included
Berkshire Brewing Company (Tour & Beer Tasting)
Saturday June 6, 3:30-5pm ($40)
- Learn the benefits of sourcing beer from a local brewery and discover some culinary techniques to incorporate beer into your menu
- Sample some of BBC’s finest! (21+ event)
Local Harvest Dinner at UMass University Club
Saturday June 6, 6-8pm ($40)
- Featuring ingredients from the pre-conference workshops, including Czajkowski produce, Sutter Meats pork, and BBC beer pairings
Permaculture Garden Design & Implementation Workshop
Sunday June 7, 7:45am-12pm ($50)
- Take part in an intensive permaculture garden design and implementation workshop with practiced designers from the Pioneer Valley
- Tour the Amherst Permaculture House’s edible “front yarden”
- Breakfast included
Local, Healthy Menu Design and Dining Halls
Sunday June 7, 8am-12pm
- Learn best practices for increasing local sourcing while remaining financially viable.
- Tour the award-winning, LEED Gold Certified Hampshire Dining Commons, UMass Amherst’s testing grounds for serving local cuisine at high volume
