Slaughterhouse and Meat Processing

In 2007 and 2008, it was a real challenge for many farmers raising animals for meat in this region to find appropriate slaughter and processing services. CISA surveyed farmers to understand the volume of demand and farmers' preferences for slaughterhouse and meat processing services.

CISA also completed a year-long assessment of solutions for slaughter needs, and developed tools for potential operators. Our initial findings suggested that, in addition to larger-scale facilities like Adams Farm (re-opened October 2008), there is a niche for small-scale regional facilities that focus on high-quality service.

Cash Flow Template for a Small-Scale Slaughterhouse

To better understand the economic constraints on slaughter and meat processing projects, CISA partnered with a small group of farmers to estimate cash flow inputs for building or renovating a small-scale slaughter and processing facility. As a result we developed a cash flow projection and Profit and Loss Statement.
